Gooey Reese’s Cheesecake Cookies are a must-try treat that combines the rich flavors of cheesecake and peanut butter in a delicious cookie form.
Ingredients
- Cheesecake Filling
- 4 oz cream cheese, softened
- ¼ cup creamy peanut butter
- ¼ cup powdered sugar
- ½ teaspoon vanilla extract
- Cookie Dough
- ½ cup unsalted butter, softened
- ½ cup creamy peanut butter
- ¾ cup packed brown sugar
- ¼ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1¾ cups all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ¾ cup Reese’s Pieces
- ½ cup chopped Reese’s Peanut Butter Cups
Instructions
- Make the filling: Beat the cream cheese, peanut butter, powdered sugar, and vanilla until smooth. Scoop about 1 tablespoon portions onto a parchment-lined plate and freeze for 30–45 minutes, until firm.
- Make the dough: Beat the butter, peanut butter, brown sugar, and granulated sugar until creamy. Add the egg and vanilla and mix until combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until a dough forms.
- Fold in the Reese’s Pieces and chopped peanut butter cups.
- Stuff the cookies: Take about 2 tablespoons of dough and flatten it slightly. Place a frozen cheesecake filling portion in the center. Wrap the dough completely around the filling and gently roll into a ball.
- Place the cookie dough balls about 2–3 inches apart on a parchment-lined baking sheet.
- Bake at 350°F for 11–14 minutes, until the edges are lightly golden but the centers still look slightly soft.
- Let the cookies cool on the baking sheet for 10 minutes before transferring them to a wire rack.
- For an extra Reese’s finish, press a few additional Reese’s Pieces or chopped peanut butter cups onto the tops while the cookies are still warm.
Notes
- Don’t overbake them. The centers should look slightly underdone when they come out of the oven—they’ll continue setting as they cool while staying soft and gooey inside.
