Gooey Reese’s Cheesecake Cookies are a must-try treat that combines the rich flavors of cheesecake and peanut butter in a delicious cookie form.


Ingredients

  • Cheesecake Filling
  • 4 oz cream cheese, softened
  • ¼ cup creamy peanut butter
  • ¼ cup powdered sugar
  • ½ teaspoon vanilla extract
  • Cookie Dough
  • ½ cup unsalted butter, softened
  • ½ cup creamy peanut butter
  • ¾ cup packed brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1¾ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup Reese’s Pieces
  • ½ cup chopped Reese’s Peanut Butter Cups

Instructions

  1. Make the filling: Beat the cream cheese, peanut butter, powdered sugar, and vanilla until smooth. Scoop about 1 tablespoon portions onto a parchment-lined plate and freeze for 30–45 minutes, until firm.
  2. Make the dough: Beat the butter, peanut butter, brown sugar, and granulated sugar until creamy. Add the egg and vanilla and mix until combined.
  3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until a dough forms.
  4. Fold in the Reese’s Pieces and chopped peanut butter cups.
  5. Stuff the cookies: Take about 2 tablespoons of dough and flatten it slightly. Place a frozen cheesecake filling portion in the center. Wrap the dough completely around the filling and gently roll into a ball.
  6. Place the cookie dough balls about 2–3 inches apart on a parchment-lined baking sheet.
  7. Bake at 350°F for 11–14 minutes, until the edges are lightly golden but the centers still look slightly soft.
  8. Let the cookies cool on the baking sheet for 10 minutes before transferring them to a wire rack.
  9. For an extra Reese’s finish, press a few additional Reese’s Pieces or chopped peanut butter cups onto the tops while the cookies are still warm.

Notes

  • Don’t overbake them. The centers should look slightly underdone when they come out of the oven—they’ll continue setting as they cool while staying soft and gooey inside.
