Ingredients
- 2 cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup sweetened shredded coconut
- 1 package (3.4 oz) instant coconut cream pudding mix
- 2 cups cold milk
- 8 oz whipped topping, thawed
- ½ cup sweetened shredded coconut
- ½ cup toasted coconut flakes, optional
Instructions
- Preheat the oven to 350°F. Mix graham cracker crumbs, melted butter, and sugar until evenly combined. Press firmly into a 9×13-inch baking dish.
- Bake the crust for 8–10 minutes. Let it cool completely.
- Beat cream cheese, powdered sugar, and vanilla until smooth. Fold in 1 cup shredded coconut. Spread evenly over the cooled crust.
- Whisk the coconut cream pudding mix with cold milk for about 2 minutes, until thickened. Let stand for 5 minutes, then spread over the cream cheese layer.
- Spread the whipped topping evenly over the pudding layer.
- Sprinkle toasted coconut over the top. For extra coconut flavor, add a little more shredded coconut.
- Cover and refrigerate for at least 4 hours, preferably overnight, so the layers can set properly.
- Cut into bars and serve chilled.
Notes
- For a richer coconut flavor, use more shredded coconut in the topping.
- Make sure to let the bars chill for the recommended time for the best texture.
