Description
A delightful and sweet casserole made with creamy sweet potatoes, topped with a crunchy pecan streusel and fluffy marshmallows, perfect for family gatherings.
Ingredients
- 4 lbs (1.8 kg) sweet potatoes, peeled and cubed
- ½ cup (113 g) unsalted butter, melted
- ½ cup (100 g) packed light brown sugar
- ¼ cup (50 g) granulated sugar
- 2 large eggs, lightly beaten
- ½ cup (120 ml) whole milk
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp salt
- ½ cup (65 g) all-purpose flour
- ½ cup (100 g) packed light brown sugar (for streusel)
- ½ tsp ground cinnamon (for streusel)
- ¼ tsp salt (for streusel)
- ¼ cup (57 g) cold unsalted butter, cubed (for streusel)
- ¾ cup (85 g) chopped pecans
- 2½–3 cups mini marshmallows
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Place the sweet potatoes in a large pot, cover with water, and bring to a boil. Cook for 15–20 minutes until fork-tender, then drain and return to the pot.
- Mash the sweet potatoes until smooth and stir in melted butter, brown sugar, granulated sugar, eggs, milk, vanilla, cinnamon, nutmeg, and salt. Mix until creamy and well combined, then spread evenly into the prepared baking dish.
- In a medium bowl, combine flour, brown sugar, cinnamon, and salt for the streusel. Cut in cold butter until the mixture resembles coarse crumbs, then stir in chopped pecans.
- Sprinkle the streusel evenly over the sweet potato mixture and bake for 25–30 minutes.
- Remove the casserole from the oven and scatter mini marshmallows over the top. Return to the oven for 5–10 minutes until marshmallows are puffed and golden. For extra browning, broil for 30–60 seconds, watching carefully.
- Let the casserole rest for 10 minutes before serving.
Notes
- For a richer flavor, use brown sugar in the filling.
- Ensure the sweet potatoes are well-drained to avoid a watery casserole.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
