Description
A delicious one-pan meal featuring tender chicken, orzo pasta, and Mediterranean flavors.
Ingredients
- 2 cups cooked orzo pasta
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup feta cheese, crumbled
- 1 cup spinach, chopped
- ½ cup Kalamata olives, pitted and sliced
- 1 cup chicken broth
- ½ cup grated Parmesan cheese
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the chicken pieces to the skillet and cook until browned and cooked through, about 5-7 minutes.
- Stir in the red bell pepper, zucchini, cherry tomatoes, oregano, thyme, salt, and black pepper. Cook for an additional 5 minutes until the vegetables are tender.
- In a large bowl, combine the cooked orzo, chicken and vegetable mixture, feta cheese, spinach, and Kalamata olives. Pour in the chicken broth and mix well.
- Transfer the mixture to a greased 9×13-inch baking dish. Sprinkle the grated Parmesan cheese evenly on top.
- Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden and bubbly.
- Let the casserole cool for 5 minutes before serving.
Notes
- For a vegetarian option, substitute the chicken with chickpeas or additional vegetables.
- Add a squeeze of fresh lemon juice before serving for an extra burst of flavor.
