Description

A delicious one-pan meal featuring tender chicken, orzo pasta, and Mediterranean flavors.


Ingredients

  • 2 cups cooked orzo pasta
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup feta cheese, crumbled
  • 1 cup spinach, chopped
  • ½ cup Kalamata olives, pitted and sliced
  • 1 cup chicken broth
  • ½ cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Add the chicken pieces to the skillet and cook until browned and cooked through, about 5-7 minutes.
  4. Stir in the red bell pepper, zucchini, cherry tomatoes, oregano, thyme, salt, and black pepper. Cook for an additional 5 minutes until the vegetables are tender.
  5. In a large bowl, combine the cooked orzo, chicken and vegetable mixture, feta cheese, spinach, and Kalamata olives. Pour in the chicken broth and mix well.
  6. Transfer the mixture to a greased 9×13-inch baking dish. Sprinkle the grated Parmesan cheese evenly on top.
  7. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden and bubbly.
  8. Let the casserole cool for 5 minutes before serving.

Notes

  • For a vegetarian option, substitute the chicken with chickpeas or additional vegetables.
  • Add a squeeze of fresh lemon juice before serving for an extra burst of flavor.
