Description

Grilled Zucchini Roll-Ups with Creamy Ricotta Filling are delicious and a perfect appetizer or side dish.


Ingredients

  • 2 medium zucchinis
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup marinara sauce (for serving)

Instructions

  1. Preheat the grill to medium heat. Slice the zucchinis lengthwise into thin strips, about 1/4 inch thick.
  2. In a bowl, combine the ricotta cheese, grated Parmesan cheese, chopped basil, garlic powder, salt, and black pepper. Mix until well combined.
  3. Brush both sides of the zucchini strips with olive oil. Place them on the grill and cook for about 2-3 minutes on each side, or until they are tender and have grill marks. Remove from the grill and let cool slightly.
  4. Once the zucchini strips are cool enough to handle, place a spoonful of the ricotta mixture at one end of each strip and roll them up tightly. Secure with a toothpick if needed.
  5. Serve the roll-ups warm or at room temperature with marinara sauce on the side for dipping.

Notes

  • For added flavor, mix in some chopped sun-dried tomatoes or olives into the ricotta filling.
