Description
Grilled Zucchini Roll-Ups with Creamy Ricotta Filling are delicious and a perfect appetizer or side dish.
Ingredients
- 2 medium zucchinis
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 cup marinara sauce (for serving)
Instructions
- Preheat the grill to medium heat. Slice the zucchinis lengthwise into thin strips, about 1/4 inch thick.
- In a bowl, combine the ricotta cheese, grated Parmesan cheese, chopped basil, garlic powder, salt, and black pepper. Mix until well combined.
- Brush both sides of the zucchini strips with olive oil. Place them on the grill and cook for about 2-3 minutes on each side, or until they are tender and have grill marks. Remove from the grill and let cool slightly.
- Once the zucchini strips are cool enough to handle, place a spoonful of the ricotta mixture at one end of each strip and roll them up tightly. Secure with a toothpick if needed.
- Serve the roll-ups warm or at room temperature with marinara sauce on the side for dipping.
Notes
- For added flavor, mix in some chopped sun-dried tomatoes or olives into the ricotta filling.
- If you prefer a lighter option, substitute part-skim ricotta cheese for a lower-fat version.
