Description
A quick and delicious skillet dish featuring ground beef, fresh spinach, and feta cheese, perfect for a weeknight meal.
Ingredients
- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 5 oz fresh spinach
- 1 cup cherry tomatoes, halved
- ½ cup crumbled feta cheese
- 1 tsp dried oregano
- ½ tsp paprika
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp red pepper flakes, optional
- 1 tbsp lemon juice
- 2 tbsp fresh parsley, chopped
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook for 6–8 minutes, breaking it apart as it cooks. Drain excess grease if needed.
- Add onion and cook for 3–4 minutes, until softened. Stir in garlic and cook for 30 seconds.
- Add oregano, paprika, garlic powder, salt, black pepper, and red pepper flakes. Stir well.
- Stir in the cherry tomatoes and cook for 2–3 minutes, until they begin to soften.
- Add spinach by the handful, stirring until wilted, about 2–3 minutes.
- Stir in lemon juice and sprinkle the feta cheese over the top. Cover for 1–2 minutes to let the feta warm slightly.
- Garnish with fresh parsley and serve warm.
Notes
- Enjoy it on its own, over rice, with warm pita bread, or alongside roasted potatoes.
