Description

A delicious and hearty Ground Beef and Zucchini Skillet Casserole that combines savory ground beef, fresh zucchini, and melted cheese for a comforting meal.


Ingredients

  • 1 lb ground beef
  • 3 medium zucchini, sliced into half-moons
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup tomato sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat the oven: Set oven to 375°F. Lightly grease a 9 × 13-inch baking dish.
  2. Brown the beef: Heat 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat. Add ground beef and onion. Cook for 6–8 minutes, breaking up the beef, until browned. Drain excess grease if needed.
  3. Cook the zucchini: Add the remaining olive oil and zucchini. Cook for 4–5 minutes, stirring occasionally, until slightly tender.
  4. Season: Stir in garlic and cook for 30 seconds. Add diced tomatoes, tomato sauce, Italian seasoning, paprika, garlic powder, salt, and black pepper. Simmer for 5 minutes.
  5. Add cheese: Stir in half of the cheddar and mozzarella. If using a skillet that isn’t oven-safe, transfer the mixture to the prepared baking dish.
  6. Top: Sprinkle the remaining cheddar and mozzarella over the top, followed by Parmesan.
  7. Bake: Bake uncovered for 15–20 minutes, until the cheese is melted, bubbly, and lightly golden.
  8. Rest and serve: Let the casserole rest for 5 minutes, then garnish with fresh parsley and serve warm.

Notes

  • For a spicier version, add red pepper flakes to the seasoning.
