A delicious and hearty Ground Beef and Zucchini Skillet Casserole that combines savory ground beef, fresh zucchini, and melted cheese for a comforting meal.
Ingredients
- 1 lb ground beef
- 3 medium zucchini, sliced into half-moons
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup tomato sauce
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 2 tablespoons olive oil
- ¼ cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat the oven: Set oven to 375°F. Lightly grease a 9 × 13-inch baking dish.
- Brown the beef: Heat 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat. Add ground beef and onion. Cook for 6–8 minutes, breaking up the beef, until browned. Drain excess grease if needed.
- Cook the zucchini: Add the remaining olive oil and zucchini. Cook for 4–5 minutes, stirring occasionally, until slightly tender.
- Season: Stir in garlic and cook for 30 seconds. Add diced tomatoes, tomato sauce, Italian seasoning, paprika, garlic powder, salt, and black pepper. Simmer for 5 minutes.
- Add cheese: Stir in half of the cheddar and mozzarella. If using a skillet that isn’t oven-safe, transfer the mixture to the prepared baking dish.
- Top: Sprinkle the remaining cheddar and mozzarella over the top, followed by Parmesan.
- Bake: Bake uncovered for 15–20 minutes, until the cheese is melted, bubbly, and lightly golden.
- Rest and serve: Let the casserole rest for 5 minutes, then garnish with fresh parsley and serve warm.
Notes
- For a spicier version, add red pepper flakes to the seasoning.
- This casserole can be made ahead of time and stored in the refrigerator before baking.
- Leftovers can be stored in an airtight container for up to 3 days.
