Description

A delicious and healthy Ground Turkey Sweet Potato Bake that combines lean protein and nutritious vegetables, perfect for a family meal.


Ingredients

  • 2 medium sweet potatoes, peeled and diced (about 2 cups)
  • 1 pound ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup diced bell pepper (any color)
  • 1 cup corn (fresh, frozen, or canned)
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
  3. Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and fully cooked, about 5-7 minutes.
  4. Stir in the cumin, smoked paprika, salt, and black pepper. Mix well to combine.
  5. In a large mixing bowl, combine the diced sweet potatoes, bell pepper, corn, black beans, and the turkey mixture. Stir until all ingredients are evenly mixed.
  6. Transfer the mixture to a greased 9×13-inch baking dish. Spread it out evenly and top with shredded cheddar cheese.
  7. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the sweet potatoes are tender and the cheese is bubbly and golden.
  8. Let the dish cool for a few minutes before serving. Garnish with fresh cilantro or parsley if desired.
