A delicious and healthy Ground Turkey Sweet Potato Bake that combines lean protein and nutritious vegetables, perfect for a family meal.
Ingredients
- 2 medium sweet potatoes, peeled and diced (about 2 cups)
- 1 pound ground turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup diced bell pepper (any color)
- 1 cup corn (fresh, frozen, or canned)
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup shredded cheddar cheese
- 2 tablespoons olive oil
- Fresh cilantro or parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
- Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and fully cooked, about 5-7 minutes.
- Stir in the cumin, smoked paprika, salt, and black pepper. Mix well to combine.
- In a large mixing bowl, combine the diced sweet potatoes, bell pepper, corn, black beans, and the turkey mixture. Stir until all ingredients are evenly mixed.
- Transfer the mixture to a greased 9×13-inch baking dish. Spread it out evenly and top with shredded cheddar cheese.
- Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the sweet potatoes are tender and the cheese is bubbly and golden.
- Let the dish cool for a few minutes before serving. Garnish with fresh cilantro or parsley if desired.
Notes
- For added flavor, consider mixing in a tablespoon of taco seasoning with the turkey.
- You can substitute ground turkey with ground chicken or lean beef for a different taste.
