Description
A quick and delicious skillet dish featuring ground turkey and zucchini, perfect for family meals.
Ingredients
- 1 lb ground turkey
- 2 medium zucchini, diced
- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 cup diced tomatoes
- ½ cup chicken broth
- 1 tsp Italian seasoning
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup shredded mozzarella or Parmesan cheese
- 2 tbsp chopped fresh parsley
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the onion and cook for 2–3 minutes.
- Add the ground turkey and cook for 6–8 minutes, breaking it apart, until browned and cooked through.
- Stir in the garlic and cook for 30 seconds.
- Add the diced zucchini and cook for 4–5 minutes, stirring occasionally, until slightly tender.
- Stir in the tomatoes, chicken broth, Italian seasoning, paprika, salt, and black pepper.
- Simmer for 5–7 minutes, until the zucchini is tender and most of the liquid has reduced.
- Sprinkle cheese over the top. Cover for 1–2 minutes until melted.
- Garnish with fresh parsley and serve hot.
Notes
- Feel free to substitute ground turkey with ground chicken or beef.
- For a spicier version, add red pepper flakes.
- This dish can be served over rice or pasta for a heartier meal.
