A delicious and flavorful Hawaiian Crack Pasta Salad with Bacon, perfect for gatherings and potlucks.
Ingredients
- 12 oz rotini pasta
- 8 slices bacon, cooked and crumbled
- 1 cup pineapple chunks, drained and chopped
- 1 cup shredded cheddar cheese
- 1/2 cup diced red bell pepper
- 1/2 cup diced red onion
- 1/4 cup sliced green onions
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1 packet (1 oz) ranch seasoning mix
- 2 tbsp pineapple juice
- 1 tbsp honey
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
Instructions
- Cook the rotini according to the package directions until al dente. Drain and rinse under cold water. Let it cool completely.
- In a large bowl, whisk together mayonnaise, sour cream, ranch seasoning, pineapple juice, honey, garlic powder, and black pepper.
- Add the cooled pasta, bacon, pineapple, cheddar, bell pepper, red onion, and green onions.
- Gently toss until everything is evenly coated.
- Cover and refrigerate for at least 1 hour to let the flavors blend.
- Before serving, stir gently. If the salad seems dry, add a spoonful of mayonnaise or sour cream.
- Sprinkle with extra bacon and green onions before serving.
Notes
- Add the bacon just before serving if you want it to stay extra crispy.
