A delicious and nutritious high-protein veggie lasagna that is perfect for a healthy meal.
Ingredients
- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 medium zucchini, diced
- 1 medium bell pepper, diced
- 8 oz mushrooms, finely chopped
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- 2 cups low-fat cottage cheese
- 1 large egg
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
- 9 lasagna noodles, cooked according to package directions
- 3 cups marinara sauce
- 1½ cups shredded part-skim mozzarella cheese
- ½ cup grated Parmesan cheese
Instructions
- Preheat the oven: Set oven to 375°F. Lightly grease a 9 × 13-inch baking dish.
- Cook the vegetables: Heat olive oil in a large skillet over medium heat. Add onion, zucchini, bell pepper, and mushrooms. Cook for 6–8 minutes, until softened. Add garlic and spinach and cook for another 1–2 minutes. Season with Italian seasoning, salt, and pepper.
- Make the protein filling: In a bowl, combine cottage cheese, egg, Parmesan, Italian seasoning, garlic powder, and black pepper. Mix until well combined.
- Layer: Spread about ¾ cup marinara sauce over the bottom of the baking dish. Add 3 lasagna noodles, followed by half of the cottage cheese mixture and half of the vegetables.
- Repeat: Add another layer of sauce, 3 noodles, the remaining cottage cheese mixture, and the remaining vegetables. Finish with the last 3 noodles and remaining marinara sauce.
- Add cheese: Sprinkle mozzarella and Parmesan evenly over the top.
- Bake: Cover with foil and bake for 30 minutes. Remove the foil and bake for another 15–20 minutes, until bubbly and lightly golden.
- Rest: Let the lasagna rest for 10–15 minutes before slicing and serving.
Notes
- For an even higher-protein version, use part-skim cottage cheese and extra mozzarella, or substitute some of the cottage cheese with ricotta-style cottage cheese blended until smooth.
