Description

A delicious and healthy alternative to traditional grilled cheese, these zucchini crust squares are packed with flavor and nutrients.


Ingredients

  • 2 medium zucchinis, grated (about 2 cups)
  • 1 teaspoon salt
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the grated zucchini and salt. Let it sit for about 10 minutes to draw out moisture. After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove excess water.
  3. In the same bowl with the squeezed zucchini, add the mozzarella cheese, Parmesan cheese, egg, garlic powder, and black pepper. Mix until well combined.
  4. Spread the zucchini mixture evenly onto the prepared baking sheet, forming a rectangle about 1/4 inch thick.
  5. Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown and firm to the touch.
  6. Remove the crust from the oven and let it cool for a few minutes. Then, sprinkle the shredded cheddar cheese evenly over the top.
  7. Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  8. Once done, let it cool for a few minutes before slicing into squares. Serve warm.
