A delicious and healthy alternative to traditional grilled cheese, these zucchini crust squares are packed with flavor and nutrients.
Ingredients
- 2 medium zucchinis, grated (about 2 cups)
- 1 teaspoon salt
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the grated zucchini and salt. Let it sit for about 10 minutes to draw out moisture. After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove excess water.
- In the same bowl with the squeezed zucchini, add the mozzarella cheese, Parmesan cheese, egg, garlic powder, and black pepper. Mix until well combined.
- Spread the zucchini mixture evenly onto the prepared baking sheet, forming a rectangle about 1/4 inch thick.
- Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown and firm to the touch.
- Remove the crust from the oven and let it cool for a few minutes. Then, sprinkle the shredded cheddar cheese evenly over the top.
- Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Once done, let it cool for a few minutes before slicing into squares. Serve warm.
Notes
- For added flavor, mix in some chopped fresh herbs like basil or oregano into the zucchini mixture.
- Try using different types of cheese, such as pepper jack for a spicy kick or feta for a tangy flavor.
