Ingredients

  • 1 box (8.5 oz) cornbread mix
  • 1 can (15 oz) whole-kernel corn, drained
  • 1 can (14.75 oz) cream-style corn
  • 1 cup sour cream
  • ½ cup melted butter
  • 2 large eggs
  • 1 lb ground beef or breakfast sausage
  • ½ cup diced onion
  • ½ cup diced bell pepper
  • 1 cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • 6 slices bacon, cooked and crumbled
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ¼ teaspoon salt
  • 2 green onions, sliced

Instructions

  1. Preheat the oven to 375°F. Grease a 9×13-inch baking dish.
  2. Brown the ground beef or sausage in a large skillet over medium heat. Add the diced onion and bell pepper and cook for 4–5 minutes, until softened. Drain excess grease.
  3. In a large bowl, whisk together the cornbread mix, whole-kernel corn, cream-style corn, sour cream, melted butter, and eggs.
  4. Stir in the cooked meat mixture, garlic powder, smoked paprika, black pepper, and salt.
  5. Fold in ½ cup cheddar, ¼ cup Monterey Jack, and half of the crumbled bacon.
  6. Pour the mixture into the prepared baking dish and spread evenly.
  7. Sprinkle the remaining cheddar and Monterey Jack over the top, followed by the remaining bacon.
  8. Bake uncovered for 35–45 minutes, until the center is set and the top is golden and bubbly.
  9. Let the casserole rest for 5–10 minutes before serving.
  10. Garnish with sliced green onions and serve warm.

  • For an even richer casserole, use hot breakfast sausage instead of ground beef and add ½ cup diced jalapeños for a spicy Southern kick.
