Description
A healthy twist on traditional coleslaw, packed with protein and flavor.
Ingredients
- 4 cups shredded green cabbage
- 1 cup shredded red cabbage
- 1 medium carrot, grated
- ¼ cup green onions, sliced
- ¾ cup plain Greek yogurt
- 2 tbsp mayonnaise
- 1 tbsp apple cider vinegar
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1–2 tsp honey or zero-calorie sweetener
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp black pepper
- ¼ tsp salt
Instructions
- Add the green cabbage, red cabbage, carrot, and green onions to a large bowl.
- In a separate bowl, whisk together the Greek yogurt, mayonnaise, vinegar, lemon juice, Dijon mustard, sweetener, and seasonings.
- Pour the dressing over the vegetables and toss until everything is evenly coated.
- Cover and refrigerate for at least 30 minutes to let the flavors develop.
- Toss again before serving.
Notes
- For even more protein, use 1 cup Greek yogurt and reduce the mayonnaise to 1 tbsp.
- You can also mix in ½ cup finely chopped cooked chicken breast for a high-protein meal-style coleslaw.
