Ingredients

  • 4 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1 medium carrot, grated
  • ¼ cup green onions, sliced
  • ¾ cup plain Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 12 tsp honey or zero-calorie sweetener
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp black pepper
  • ¼ tsp salt

Instructions

  1. Add the green cabbage, red cabbage, carrot, and green onions to a large bowl.
  2. In a separate bowl, whisk together the Greek yogurt, mayonnaise, vinegar, lemon juice, Dijon mustard, sweetener, and seasonings.
  3. Pour the dressing over the vegetables and toss until everything is evenly coated.
  4. Cover and refrigerate for at least 30 minutes to let the flavors develop.
  5. Toss again before serving.

Notes

  • For even more protein, use 1 cup Greek yogurt and reduce the mayonnaise to 1 tbsp.
  • You can also mix in ½ cup finely chopped cooked chicken breast for a high-protein meal-style coleslaw.
