Description

A delightful homemade cinnamon apple cake that combines the sweetness of apples with the warmth of cinnamon, perfect for any occasion.


Ingredients

  • 115 g unsalted butter, softened
  • 100 g granulated sugar
  • 110 g dark brown sugar
  • 2 large eggs, at room temperature
  • ml vanilla extract
  • 155 g all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • 225 g peeled and finely chopped apples, about 2 medium apples
  • 60 g walnuts, chopped

Instructions

  1. Preheat the oven to 175°C. Grease a 23 cm round cake pan and line the bottom with baking paper.
  2. Cream the butter and sugars.
  3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the eggs.
  5. Beat in the eggs one at a time, then mix in the vanilla.
  6. Add the dry ingredients.
  7. Add the flour, baking soda, cinnamon, and salt. Stir just until combined. Don’t overmix.
  8. Fold in the apples and walnuts.
  9. Gently fold in the chopped apples and walnuts until evenly distributed.
  10. Transfer to the pan.
  11. Spoon the thick batter into the prepared cake pan and spread the top evenly.
  12. Bake for 40–45 minutes, or until a toothpick inserted into the centre comes out clean or with a few moist crumbs.
  13. Cool.
  14. Let the cake cool in the pan for 10–15 minutes, then carefully remove it.
  15. Slice and serve warm with vanilla ice cream, whipped cream, or a light dusting of powdered sugar.
