Description
A delightful homemade cinnamon apple cake that combines the sweetness of apples with the warmth of cinnamon, perfect for any occasion.
Ingredients
- 115 g unsalted butter, softened
- 100 g granulated sugar
- 110 g dark brown sugar
- 2 large eggs, at room temperature
- 1¼ ml vanilla extract
- 155 g all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ¼ tsp salt
- 225 g peeled and finely chopped apples, about 2 medium apples
- 60 g walnuts, chopped
Instructions
- Preheat the oven to 175°C. Grease a 23 cm round cake pan and line the bottom with baking paper.
- Cream the butter and sugars.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs.
- Beat in the eggs one at a time, then mix in the vanilla.
- Add the dry ingredients.
- Add the flour, baking soda, cinnamon, and salt. Stir just until combined. Don’t overmix.
- Fold in the apples and walnuts.
- Gently fold in the chopped apples and walnuts until evenly distributed.
- Transfer to the pan.
- Spoon the thick batter into the prepared cake pan and spread the top evenly.
- Bake for 40–45 minutes, or until a toothpick inserted into the centre comes out clean or with a few moist crumbs.
- Cool.
- Let the cake cool in the pan for 10–15 minutes, then carefully remove it.
- Slice and serve warm with vanilla ice cream, whipped cream, or a light dusting of powdered sugar.
Notes
- Ensure the apples are finely chopped for even distribution.
- For a richer flavor, consider adding a pinch of nutmeg.
- This cake can be stored in an airtight container for up to 3 days.
