Ingredients

  • 3 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots (about 4 medium carrots)
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts or pecans (optional)
  • 1 teaspoon vanilla extract
  • For the Cinnamon Cream:
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, combine the vegetable oil, eggs, grated carrots, crushed pineapple, and vanilla extract. Mix well until combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. If using, fold in the chopped nuts.
  5. Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  7. While the cakes are cooling, prepare the cinnamon cream. In a mixing bowl, beat the heavy whipping cream until soft peaks form. Gradually add the powdered sugar, cinnamon, and vanilla extract, and continue to beat until stiff peaks form.
  8. Once the cakes are completely cool, place one layer on a serving plate. Spread a generous layer of cinnamon cream on top. Place the second cake layer on top and frost the top and sides with the remaining cinnamon cream.
  9. Serve immediately or refrigerate for up to 2 hours before serving for a firmer texture.

Notes

  • For a lighter version, substitute half the oil with unsweetened applesauce.
  • You can also add raisins or shredded coconut to the batter for extra flavor and texture.
