Description

A refreshing and delicious Honey-Drizzled Tropical Fruit Parfait made with layers of tropical fruits, creamy yogurt, and crunchy granola.


Ingredients

  • 1 ripe mango, peeled and diced
  • 150 g fresh strawberries, sliced
  • 150 g pineapple, diced
  • 1 banana, sliced
  • 1 kiwi, peeled and diced
  • 1 tbsp lime juice
  • 400 g Greek yogurt or plain yogurt
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 2 tbsp shredded coconut
  • 100 g granola
  • 2 tbsp chopped almonds or macadamia nuts
  • 23 tbsp honey, for drizzling
  • Fresh mint, optional
  • Extra coconut, optional

Instructions

  1. Combine the mango, strawberries, pineapple, banana, and kiwi in a bowl. Add the lime juice and gently toss. Set aside.
  2. In another bowl, mix the Greek yogurt, honey, vanilla, and shredded coconut until smooth and creamy.
  3. Use four clear glasses or dessert cups. Add a spoonful of yogurt to the bottom of each glass.
  4. Spoon a layer of the mixed tropical fruit over the yogurt.
  5. Sprinkle a layer of granola and chopped nuts over the fruit.
  6. Continue layering yogurt, fruit, and granola until the glasses are filled. Finish with a layer of fruit and granola.
  7. Drizzle each parfait generously with honey.
  8. Top with fresh mint and a little shredded coconut or chopped nuts.
  9. Serve immediately for crunchy granola, or refrigerate for up to 1 hour before serving.

  • Add passion fruit pulp for a bright, tangy flavor.
  • Replace yogurt with coconut yogurt for a dairy-free version.
  • Add diced papaya or dragon fruit.
  • Use toasted coconut granola for extra tropical flavor.
  • Add a few blueberries or raspberries for a colorful contrast.
