Description

A delicious and easy-to-make Honey Garlic Chicken, Potato & Broccoli Bake that combines tender chicken, roasted potatoes, and vibrant broccoli in a sweet and savory sauce.

Ingredients

  • 1½ lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1½ lbs baby potatoes, halved
  • 4 cups broccoli florets
  • 2 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp Italian seasoning
  • ⅓ cup honey
  • ¼ cup soy sauce
  • 5 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • ½ tsp smoked paprika
  • ¼ tsp red pepper flakes, optional

Instructions

  1. Preheat the oven to 400°F. Lightly grease a large 9×13-inch baking dish or sheet pan.
  2. Prepare the potatoes. Toss the halved potatoes with 1 tablespoon olive oil, paprika, salt, pepper, and Italian seasoning. Spread them evenly in the baking dish.
  3. Roast the potatoes for 20 minutes to give them a head start.
  4. Make the sauce. Whisk together the honey, soy sauce, garlic, olive oil, apple cider vinegar, Dijon mustard, smoked paprika, and red pepper flakes.
  5. Add the chicken and broccoli. Toss the chicken pieces and broccoli with the remaining tablespoon of olive oil. Add them to the baking dish with the potatoes.
  6. Add the honey garlic sauce. Pour about two-thirds of the sauce over the chicken, potatoes, and broccoli. Toss gently to coat everything.
  7. Bake for another 20–25 minutes, stirring once halfway through, until the chicken reaches 165°F, the potatoes are tender, and the broccoli is roasted.
  8. Finish with more sauce. Drizzle the remaining honey garlic sauce over the top during the final 5 minutes of baking.
  9. Serve hot, spooning the caramelized sauce from the pan over the chicken and vegetables.

Notes

  • Cut the potatoes into small, evenly sized pieces so they finish cooking at the same time as the chicken.
  • For extra caramelized edges, broil for 1–2 minutes at the end.
