Ingredients
- 2 cups baby carrots, peeled
- 2 cups fresh green beans, trimmed
- 2 tablespoons unsalted butter
- 3 tablespoons honey
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- In a large pot, bring salted water to a boil. Add the baby carrots and cook for 5 minutes. Then, add the green beans and cook for an additional 3-4 minutes until both vegetables are tender but still crisp. Drain and set aside.
- In a large skillet over medium heat, melt the butter. Once melted, stir in the honey, salt, black pepper, and garlic powder. Cook for 1-2 minutes until the mixture is bubbly.
- Add the cooked carrots and green beans to the skillet. Toss to coat the vegetables evenly in the honey glaze. Cook for an additional 2-3 minutes, stirring occasionally, until heated through.
- Remove from heat and drizzle with fresh lemon juice. Toss again to combine.
- Transfer to a serving dish and garnish with chopped parsley before serving.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the honey glaze.
- Try substituting maple syrup for honey for a different flavor profile.
