  • 2 cups baby carrots, peeled
  • 2 cups fresh green beans, trimmed

  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  1. In a large pot, bring salted water to a boil. Add the baby carrots and cook for 5 minutes. Then, add the green beans and cook for an additional 3-4 minutes until both vegetables are tender but still crisp. Drain and set aside.
  2. In a large skillet over medium heat, melt the butter. Once melted, stir in the honey, salt, black pepper, and garlic powder. Cook for 1-2 minutes until the mixture is bubbly.
  3. Add the cooked carrots and green beans to the skillet. Toss to coat the vegetables evenly in the honey glaze. Cook for an additional 2-3 minutes, stirring occasionally, until heated through.
  4. Remove from heat and drizzle with fresh lemon juice. Toss again to combine.
  5. Transfer to a serving dish and garnish with chopped parsley before serving.
