Description
A refreshing and crunchy slaw made with Honeycrisp apples, pecans, and broccoli slaw mix, dressed in a creamy dressing.
Ingredients
- 4 cups broccoli slaw mix
- 2 medium Honeycrisp apples, cored and thinly sliced or julienned
- ¾ cup chopped pecans
- ½ cup dried cranberries
- ¼ cup thinly sliced red onion
- ¼ cup shredded carrots, optional
- ½ cup mayonnaise
- ¼ cup plain Greek yogurt
- 2 tablespoons apple cider vinegar
- 2 tablespoons honey
- 1 teaspoon Dijon mustard
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
Instructions
- Toast the pecans. Place the chopped pecans in a dry skillet over medium-low heat. Toast for 3–5 minutes, stirring frequently until fragrant. Set aside to cool.
- Prepare the dressing. In a small bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until smooth and creamy.
- Prepare the apples. Core and thinly slice the Honeycrisp apples. For extra freshness and to help prevent browning, toss them with a small squeeze of lemon juice.
- Combine the slaw. In a large bowl, add the broccoli slaw mix, apples, toasted pecans, dried cranberries, red onion, and shredded carrots, if using.
- Add the dressing. Pour the dressing over the ingredients and toss until everything is evenly coated.
- Chill before serving. Refrigerate for 20–30 minutes to allow the flavors to blend. Toss again before serving and adjust the seasoning if needed.
Notes
- Keep it crunchy: Add the pecans just before serving if you want them extra crisp.
- Balance the sweetness: Add another teaspoon of apple cider vinegar if you prefer a tangier dressing.
- Make it ahead: Prepare the dressing and chop the vegetables in advance, but combine them shortly before serving for the best texture.
- Easy variation: Add crumbled feta cheese or sunflower seeds for extra flavor and crunch.
- Storage: Store leftovers in an airtight container in the refrigerator for up to 2 days. The apples and broccoli will soften gradually, so this slaw is best enjoyed fresh.
