Description

A delicious one-pan recipe featuring Italian herb chicken, baby potatoes, and fresh green beans, perfect for a family meal.


Ingredients

  • 1½ lbs boneless, skinless chicken breasts or thighs, cut into bite-size pieces
  • 1½ lbs baby potatoes, halved
  • 12 oz fresh green beans, trimmed
  • 3 tbsp olive oil
  • 3 tbsp melted butter
  • 4 cloves garlic, minced
  • 1½ tsp Italian seasoning
  • 1 tsp dried parsley
  • 1 tsp paprika
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ¼ cup grated Parmesan cheese
  • 1 tbsp fresh chopped parsley, for garnish
  • 1 lemon, cut into wedges, optional

Instructions

  1. Preheat the oven: Heat oven to 400°F. Lightly grease a large 9×13-inch baking dish.
  2. Season the potatoes: Place the halved potatoes in the baking dish. Toss with 1 tablespoon olive oil, ½ teaspoon Italian seasoning, ¼ teaspoon salt, and ¼ teaspoon black pepper.
  3. Start baking: Spread the potatoes in an even layer and bake for 20 minutes.
  4. Season the chicken: In a bowl, combine the chicken with the remaining olive oil, melted butter, garlic, remaining Italian seasoning, parsley, paprika, onion powder, garlic powder, remaining salt and pepper.
  5. Add the chicken and green beans: Remove the baking dish from the oven. Add the seasoned chicken and green beans around the potatoes. Toss gently to coat everything with the garlic-herb mixture.
  6. Bake: Return the dish to the oven and bake for another 20–25 minutes, or until the chicken reaches 165°F internally and the potatoes are tender.
  7. Add Parmesan: Sprinkle Parmesan cheese over the chicken and vegetables. Bake for another 3–5 minutes until the cheese is melted and lightly golden.
  8. Serve: Garnish with fresh parsley and serve hot with lemon wedges if desired.

Notes

  • For extra-crispy potatoes, place the cut side down against the baking dish during the first 20 minutes of baking.
