Instructions

  1. Begin by slicing the tops off the onions and peeling them. Carefully remove the inner layers to create rings, leaving the outer two layers intact. You should have about 8-10 rings per onion. Set aside the smaller inner rings for another use.
  2. In a mixing bowl, combine the cream cheese, shredded cheddar cheese, crumbled bacon, chopped jalapeños, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  3. Preheat your oil in a deep fryer or a large pot to 350°F.
  4. Stuff each onion ring with the jalapeño popper mixture, pressing it down gently to fill the ring completely.
  5. Set up a breading station: Place the flour in one shallow dish, beat the eggs in a second dish, and place the breadcrumbs in a third dish.
