A delicious twist on traditional mac and cheese, this Keto Cheeseburger Cauliflower Mac combines roasted cauliflower with a savory cheeseburger mixture and creamy cheese sauce for a low-carb delight.
Ingredients
- 1 large head cauliflower, cut into bite-sized florets (about 6 cups)
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1½ pounds ground beef (80/20 or 85/15)
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon Worcestershire sauce
- 1 tablespoon tomato paste
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 4 ounces cream cheese, softened
- 1 cup heavy cream
- 2 cups shredded sharp cheddar cheese
- ½ cup shredded mozzarella cheese
- 2 tablespoons Dijon mustard
- ¼ teaspoon cayenne pepper (optional)
- 1 cup shredded cheddar cheese (for topping)
- 4 slices bacon, cooked and crumbled
- 2 tablespoons chopped green onions
- Dill pickle slices (optional)
Instructions
- Preheat the oven to 400°F (200°C). Toss the cauliflower florets with the olive oil, salt, and pepper. Spread onto a parchment-lined baking sheet and roast for 15–18 minutes, until just tender. Set aside.
- Reduce the oven temperature to 375°F (190°C). Heat a large skillet over medium-high heat. Add the ground beef and onion. Cook for 6–8 minutes, breaking up the beef as it browns. Drain excess grease if necessary. Stir in the garlic, onion powder, garlic powder, smoked paprika, Worcestershire sauce, tomato paste, salt, and pepper. Cook for 1–2 minutes until fragrant.
- Reduce the heat to medium-low. Stir in the cream cheese until melted. Pour in the heavy cream and cook for 2–3 minutes. Add the cheddar, mozzarella, Dijon mustard, and cayenne (if using). Stir until the cheese is melted and the sauce is smooth.
- Fold the roasted cauliflower into the beef and cheese mixture. Transfer to a greased 9 × 13-inch baking dish. Sprinkle the remaining 1 cup cheddar cheese evenly over the top.
- Bake for 12–15 minutes, or until the cheese is melted and bubbly.
- Sprinkle with crumbled bacon, chopped green onions, and dill pickle slices, if desired. Serve hot with a simple green salad or roasted vegetables.
