Description

A delightful and easy-to-make Lazy Amish Cherry Caramel Custard Dump Cake featuring molten cherry pockets and a rich custard layer.


Ingredients

  • 2 cans cherry pie filling
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • ½ tsp cinnamon
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 2 cups cold whole milk
  • ½ cup sour cream
  • 1 tsp vanilla extract
  • 1 box (15.25 oz) yellow cake mix
  • ½ cup unsalted butter, melted
  • ½ cup caramel sauce, plus more for drizzling
  • ½ cup chopped pecans, optional

Instructions

  1. Preheat the oven: Heat oven to 350°F. Grease a 9×13-inch baking dish.
  2. Prepare the cherries: Stir the cherry pie filling, vanilla, lemon juice, and cinnamon together. Spread evenly in the bottom of the baking dish.
  3. Make the custard: Whisk the pudding mix and cold milk for about 2 minutes, until thickened. Stir in the sour cream and vanilla. Spoon the custard over the cherries and gently spread it into an even layer.
  4. Add the cake mix: Sprinkle the dry yellow cake mix evenly over the custard. Do not stir the layers together.
  5. Add the butter: Slowly drizzle the melted butter over as much of the cake mix as possible. Try to cover most of the surface.
  6. Add caramel: Drizzle ½ cup caramel sauce over the top. Sprinkle with pecans if using.
  7. Bake: Bake uncovered for 45–55 minutes, until the top is golden and the cherry filling is bubbling around the edges.
  8. Create molten pockets: While the cake is still hot, drizzle a little extra caramel sauce over the top. Let it sit for 10–15 minutes so the caramel melts down into the warm cake and cherry pockets.
  9. Serve: Spoon the cake directly from the baking dish while warm. For an extra-rich dessert, serve with vanilla ice cream and another drizzle of caramel.
