Ingredients

  • ½ cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 1 ¾ cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ¾ cup fresh blueberries
  • 4 oz cream cheese, softened (for cheesecake filling)
  • ¼ cup powdered sugar (for cheesecake filling)
  • ½ tsp vanilla extract (for cheesecake filling)
  • ½ cup powdered sugar (for optional lemon glaze)
  • 12 tbsp fresh lemon juice (for optional lemon glaze)

Instructions

  1. In a bowl, beat the butter, cream cheese, and granulated sugar until smooth and creamy.
  2. Beat in the egg, vanilla, lemon juice, and lemon zest.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture.
  4. Gently fold in the blueberries, being careful not to crush them.
  5. For the cheesecake filling, mix the cream cheese, powdered sugar, and vanilla until smooth.
  6. Scoop about 2 tbsp cookie dough and flatten it slightly. Place about 1 tsp cheesecake filling in the center.
  7. Cover with another small piece of dough and gently seal the edges. Roll into a ball.
  8. Place the cookies on a parchment-lined baking sheet, leaving about 2 inches between each cookie.
  9. Chill the shaped cookies for 20–30 minutes.
  10. Preheat the oven to 350°F.
  11. Bake for 12–15 minutes, until the edges are lightly golden and the centers look set.
  12. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack.
  13. For the optional glaze, whisk powdered sugar with lemon juice and drizzle over the cooled cookies.

Notes

  • If using frozen blueberries, add them straight from the freezer without thawing.
