Description

A creamy and delicious protein-packed dessert featuring the refreshing flavors of lemon and blueberries.

Ingredients

  • 1 cup cottage cheese
  • 1/2 cup fresh or frozen blueberries
  • 1–2 tablespoons honey or maple syrup
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon finely grated lemon zest
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons plain Greek yogurt, optional, for extra creaminess
  • 1 tablespoon chia seeds, optional, for added texture
  • Optional toppings: Extra fresh blueberries, a little lemon zest, 2 tablespoons granola, 1 tablespoon crushed graham crackers

Instructions

  1. Blend the cottage cheese. Add the cottage cheese to a blender or food processor. Blend for 1–2 minutes until completely smooth and creamy.
  2. Add the lemon flavor. Add the honey or maple syrup, lemon juice, lemon zest, vanilla extract, and Greek yogurt if using. Blend again until everything is well combined.
  3. Add the blueberries. Add half of the blueberries and pulse briefly for a light purple color with small fruit pieces. For a completely smooth mixture, blend all the blueberries in.
  4. Adjust the sweetness. Taste the mixture and add a little more honey or maple syrup if desired. Add the chia seeds if you want a thicker consistency.
  5. Chill. Spoon the mixture into two small serving glasses or jars. Refrigerate for at least 30 minutes to allow the flavors to develop and the texture to firm up.
  6. Garnish and serve. Top with the remaining blueberries, a sprinkle of lemon zest, and your choice of granola or crushed graham crackers.

Notes

  • For a vegan version, substitute cottage cheese with a plant-based alternative.
