Description

A delicious and healthy recipe for Lemon Butter Salmon served with crispy potatoes and broccoli.


Ingredients

  • 2 (6-ounce) salmon fillets
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 pound baby potatoes, halved
  • 2 cups broccoli florets
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a small saucepan, melt the butter over low heat. Stir in the olive oil, lemon juice, lemon zest, minced garlic, dried thyme, salt, and pepper. Remove from heat and set aside.
  3. Place the halved baby potatoes on one side of the prepared baking sheet. Drizzle with olive oil, season with salt and pepper, and toss to coat. Spread them out in a single layer.
  4. Roast the potatoes in the preheated oven for 15 minutes.
  5. After 15 minutes, remove the baking sheet from the oven. Push the potatoes to one side and add the broccoli florets to the other side. Drizzle the broccoli with olive oil, season with salt and pepper, and toss to coat.
  6. Place the salmon fillets in the center of the baking sheet. Brush the lemon butter mixture generously over the salmon.
  7. Return the baking sheet to the oven and roast for an additional 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the potatoes are crispy and golden.
  8. Remove from the oven and let rest for a couple of minutes. Garnish with fresh parsley before serving.

Notes

  • For added flavor, sprinkle some grated Parmesan cheese over the broccoli before roasting.
  • Substitute asparagus or green beans for the broccoli for a different vegetable option.
