Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest
  • 1/4 cup fresh lemon juice
  • 1/2 cup buttermilk
  • 1 cup finely chopped fresh strawberries
  • 1/2 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • 23 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1/3 cup finely crushed freeze-dried strawberries
  • 23 tbsp milk, as needed
  • Fresh strawberries and lemon slices, for garnish

Instructions

  1. Preheat oven to 350°F. Grease and line a 9×13-inch sheet pan with parchment paper.
  2. Whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate bowl, beat the butter and sugar for 2–3 minutes, until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Mix in vanilla and lemon zest.
  5. Stir in the lemon juice.
  6. Add the dry ingredients alternately with the buttermilk, beginning and ending with the dry ingredients. Mix just until combined.
  7. Gently fold in the chopped strawberries.
  8. Spread the batter evenly in the prepared pan.
  9. Bake for 25–30 minutes, or until the center springs back lightly and a toothpick comes out clean.
  10. Cool completely before frosting.
  11. Make the Frosting: Beat the softened butter until creamy.
  12. Gradually add the powdered sugar.
  13. Mix in lemon juice, lemon zest, and crushed freeze-dried strawberries.
  14. Add milk a tablespoon at a time until smooth and spreadable.
  15. Spread over the cooled cake and garnish with fresh strawberries.

Notes

  • Pat the chopped strawberries dry with paper towels before folding them into the batter to keep the crumb tender without making the cake soggy.
