Ingredients
- 1½ cups (180 g) all-purpose flour

Instructions
- Prepare the pan: Preheat the oven to 350°F (175°C). Grease and line a 9 × 13-inch (23 × 33 cm) baking pan with parchment paper.
- Prepare the zucchini: Finely grate the zucchini. Gently squeeze out some excess moisture, but don’t dry it completely—the moisture helps keep the bars tender.
- Mix the dry ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
- Cream the butter and sugar: In a large bowl, beat the softened butter and sugar until light and fluffy, about 2–3 minutes.
- Add the wet ingredients: Beat in the eggs one at a time. Mix in the lemon juice, lemon zest, and vanilla.
- Combine: Gradually add the dry ingredients, mixing just until combined. Fold in the grated zucchini.
- Bake: Spread the batter evenly in the prepared pan. Bake for 30–40 minutes, or until the center is set and a toothpick inserted in the middle comes out clean.
- Cool: Let the bars cool in the pan for about 15–20 minutes, then transfer to a rack and cool completely before glazing.
- Make the glaze: Whisk the powdered sugar, lemon juice, and lemon zest until smooth. Add a little more lemon juice if needed to reach a pourable consistency.
- Glaze: Drizzle the lemon glaze over the cooled bars and let it set for 10–15 minutes.
- Slice and serve: Cut into squares and serve. Store leftovers in an airtight container.
