  • ½ cup (115 g) unsalted butter, softened
  • 2 large eggs
  • 1½ cups (about 180 g) finely grated zucchini, lightly drained
  • 2 tablespoons (30 mL) fresh lemon juice
  • 1 tablespoon (15 mL) finely grated lemon zest
  • 1 teaspoon (5 mL) vanilla extract
  • 1½ cups (180 g) powdered sugar (for glaze)
  • 23 tablespoons (30–45 mL) fresh lemon juice (for glaze)
  • 1 teaspoon (5 mL) finely grated lemon zest (for glaze)

Instructions

  1. Prepare the pan: Preheat the oven to 350°F (175°C). Grease and line a 9 × 13-inch (23 × 33 cm) baking pan with parchment paper.
  2. Prepare the zucchini: Finely grate the zucchini. Gently squeeze out some excess moisture, but don’t dry it completely—the moisture helps keep the bars tender.
  3. Mix the dry ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
  4. Cream the butter and sugar: In a large bowl, beat the softened butter and sugar until light and fluffy, about 2–3 minutes.
  5. Add the wet ingredients: Beat in the eggs one at a time. Mix in the lemon juice, lemon zest, and vanilla.
  6. Combine: Gradually add the dry ingredients, mixing just until combined. Fold in the grated zucchini.
  7. Bake: Spread the batter evenly in the prepared pan. Bake for 30–40 minutes, or until the center is set and a toothpick inserted in the middle comes out clean.
  8. Cool: Let the bars cool in the pan for about 15–20 minutes, then transfer to a rack and cool completely before glazing.
