Description

A delicious and creamy Loaded Avocado Tomato Grilled Cheese sandwich featuring melted cheddar and mozzarella cheese, perfect for a comforting meal.

Ingredients

  • 4 slices sourdough or thick-cut sandwich bread
  • 1 large ripe avocado
  • 1 medium tomato, thinly sliced
  • 4 slices cheddar cheese
  • 4 slices mozzarella cheese
  • 2 tablespoons cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt, or to taste
  • 1 teaspoon lemon juice
  • Optional Add-Ins:
  • 4 slices cooked bacon
  • 2 tablespoons thinly sliced red onion
  • 1 tablespoon chopped fresh basil
  • Pinch of red pepper flakes

Instructions

  1. Prepare the avocado: Cut the avocado in half, remove the pit, and scoop the flesh into a small bowl. Mash gently with a fork, leaving a few small chunks for texture. Add the lemon juice, salt, black pepper, and garlic powder. Mix until combined, then set aside.
  2. Prepare the bread: Spread a thin, even layer of softened butter on one side of each bread slice. Turn the bread slices over so the unbuttered sides face up. Spread cream cheese evenly over the unbuttered sides.
  3. Assemble the sandwiches: Place a slice of cheddar cheese on two bread slices. Spread the mashed avocado over the cheddar. Arrange the tomato slices on top and pat them dry first with a paper towel to reduce excess moisture. Add the mozzarella cheese and any optional toppings. Close each sandwich with the remaining bread slices, keeping the buttered sides facing outward.
  4. Grill until golden and melty: Heat a skillet or nonstick frying pan over medium-low heat. Place the sandwiches in the skillet and cook for 3–5 minutes, until the bottom is golden brown and crisp. Carefully flip the sandwiches and cook for another 3–5 minutes. If the bread browns too quickly before the cheese melts, reduce the heat and cover the skillet for 1–2 minutes. Remove from the skillet and let the sandwiches rest for 1 minute before slicing.
  5. Slice and serve: Cut each sandwich diagonally in half. Sprinkle with fresh basil or red pepper flakes if desired. Serve immediately while the cheese is warm and stretchy.

Notes

  • For extra flavor, consider adding cooked bacon or fresh herbs.
  • Make sure to pat the tomato slices dry to prevent sogginess.
  • Adjust seasoning to taste.
