Description
A crispy, buttery grilled cheese loaded with creamy avocado, juicy tomatoes, and plenty of gooey melted cheese. Perfect for a quick lunch or comforting snack!
Ingredients
- 4 slices sourdough or white bread
- 1 ripe avocado, mashed
- 1 medium tomato, thinly sliced
- 4 slices mozzarella or cheddar cheese
- ½ cup shredded Monterey Jack or mozzarella cheese
- 2 tbsp butter, softened
- 1 tbsp mayonnaise
- ¼ tsp garlic powder
- ¼ tsp salt
- ⅛ tsp black pepper
- 1 tsp lemon juice
- Optional: red pepper flakes or fresh cilantro
Instructions
- Prepare the avocado: Mash the avocado with lemon juice, salt, pepper, and garlic powder.
- Build the sandwiches: Spread mayonnaise lightly on the inside of each bread slice. Layer cheese, mashed avocado, tomato slices, and shredded cheese. Top with another slice of bread.
- Butter the bread: Spread softened butter over the outside of each sandwich.
- Grill: Heat a skillet over medium-low heat. Place the sandwiches in the skillet and cook for 3–4 minutes per side, pressing gently with a spatula, until golden brown and the cheese is completely melted.
- Finish: Remove from the skillet and let rest for 1–2 minutes. Slice in half and serve warm.
Notes
- Tip for Extra-Creamy Cheese: Cover the skillet with a lid for the last 1–2 minutes of cooking. The trapped steam helps melt the cheese without burning the bread.
