Loaded Bacon Cheeseburger Tacos are a delicious fusion of classic cheeseburgers and tacos, featuring a savory beef and bacon filling topped with cheese, fresh vegetables, and a creamy burger sauce.
Ingredients
- 500 g ground beef
- 150 g bacon, chopped
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tsp onion powder
- 1 tsp garlic powder
- ½ tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
- 1 tbsp Worcestershire sauce
- 8–10 small flour or corn tortillas
- 150 g shredded cheddar cheese
- 100 g shredded mozzarella cheese
- 1 cup shredded lettuce
- 1 medium tomato, diced
- ½ small red onion, finely sliced
- ½ cup dill pickles, chopped
- 2 tbsp fresh parsley, optional
- 120 g mayonnaise
- 2 tbsp ketchup
- 1 tbsp yellow mustard
- 2 tbsp finely chopped pickles
- 1 tsp pickle juice
- ½ tsp garlic powder
- ¼ tsp smoked paprika
- Black pepper, to taste
Instructions
- Make the Burger Sauce: Mix mayonnaise, ketchup, mustard, chopped pickles, pickle juice, garlic powder, smoked paprika, and black pepper in a small bowl. Refrigerate while preparing the tacos.
- Cook the Bacon: Heat a large skillet over medium heat. Add the chopped bacon and cook for 5–7 minutes, until crispy. Transfer the bacon to a paper towel-lined plate, leaving about 1 tablespoon of bacon fat in the skillet.
- Cook the Beef: Add the diced onion to the skillet and cook for 2–3 minutes. Add the ground beef and cook for 5–7 minutes, breaking it apart with a spatula. Add garlic, onion powder, garlic powder, smoked paprika, salt, pepper, and Worcestershire sauce. Cook for another 1–2 minutes. Stir the crispy bacon back into the beef mixture.
- Warm the Tortillas: Heat the tortillas in a dry skillet for about 20–30 seconds per side, just until soft and flexible.
- Add the Cheese: Fill each tortilla with the beef and bacon mixture. Top generously with cheddar and mozzarella. Fold the tortillas over. For extra-crispy tacos, place them in a skillet over medium heat for 1–2 minutes per side, until golden and the cheese has melted.
- Load the Tacos: Open each taco carefully and add shredded lettuce, diced tomatoes, red onion, chopped pickles, extra crispy bacon, and creamy burger sauce. Garnish with fresh parsley if desired.
Notes
- For the ultimate loaded version, consider adding jalapeños, caramelized onions, crispy fried onions, extra cheddar, pickle relish, and a drizzle of ketchup and mustard.
- For the crispiest cheeseburger tacos, don’t overfill the tortillas. Toast them in a hot skillet until golden and crunchy while the cheese melts inside.
- Serve immediately with extra burger sauce for dipping!
