Description

Loaded Cheesy Cauliflower Steaks are a delicious and flavorful dish featuring thick slices of cauliflower topped with melted cheese, crispy bacon, and fresh garnishes.


Ingredients

  • 1 large head cauliflower
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • 1½ cups shredded sharp cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • 6 slices bacon, cooked and crumbled
  • ¼ cup sour cream
  • 2 tbsp ranch dressing
  • 2 green onions, sliced
  • 2 tbsp chopped fresh parsley
  • ¼ cup diced tomatoes, optional

Instructions

  1. Preheat the oven: Heat oven to 425°F. Line a large baking sheet with parchment paper.
  2. Cut the cauliflower: Remove the outer leaves but keep the core intact. Slice the cauliflower into 1-inch-thick steaks. You should get about 3–4 steaks. Reserve the smaller florets for another use.
  3. Season: Arrange the cauliflower steaks on the baking sheet. Brush both sides with olive oil and season with garlic powder, smoked paprika, onion powder, salt, black pepper, and Italian seasoning.
  4. Roast: Roast for 20 minutes. Carefully flip the cauliflower steaks and roast for another 10–12 minutes, until golden brown and tender.
  5. Add the cheese: Sprinkle the cheddar and Monterey Jack evenly over each cauliflower steak.
  6. Load them up: Top with crumbled bacon and return to the oven for 3–5 minutes, until the cheese is completely melted and bubbly.
  7. Make the drizzle: Stir together the sour cream and ranch dressing. Drizzle over the hot cauliflower steaks.
  8. Garnish: Sprinkle with green onions, parsley, and diced tomatoes if using.
  9. Serve: Serve immediately while the cheese is hot and gooey.

Notes

  • For extra-crispy edges, place the cauliflower under the broiler for 1–2 minutes after adding the cheese. Watch closely so the cheese doesn’t burn.
