A comforting and hearty casserole combining meatloaf and loaded potatoes, perfect for family dinners.
Ingredients
- 2 pounds ground beef
- 1 cup breadcrumbs
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup ketchup
- 1/4 cup milk
- 1 cup shredded cheddar cheese
- 4 medium potatoes, peeled and diced
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
- 1/2 cup cooked bacon, crumbled
Instructions
- Preheat the oven to 350°F.
- In a large bowl, combine the ground beef, breadcrumbs, egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
- Press half of the meat mixture into the bottom of a greased 9×13-inch baking dish to form a base layer.
- In a separate bowl, mix the diced potatoes with sour cream, half of the cheddar cheese, and half of the green onions. Spread this potato mixture evenly over the meat layer in the baking dish.
- Top the potato layer with the remaining meat mixture, pressing it down gently.
- Spread the ketchup evenly over the top of the meatloaf layer.
- Sprinkle the remaining cheddar cheese and crumbled bacon over the ketchup.
- Cover the dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the meat is cooked through and the cheese is bubbly.
- Let the casserole cool for 10 minutes before slicing.
Notes
- For a spicier kick, add diced jalapeños to the potato mixture.
- You can substitute ground turkey or chicken for a leaner option.
