Description
A delicious and refreshing low-carb salad made with cauliflower, bacon, and a creamy dressing.
Ingredients
- 1 large head cauliflower, cut into small florets
- 4 slices bacon, cooked and crumbled
- ½ cup shredded cheddar cheese
- ¼ cup red onion, finely diced
- ¼ cup chopped celery
- ¼ cup chopped green onions
- ½ cup mayonnaise
- ¼ cup sour cream
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp chopped fresh parsley
Instructions
- Bring a large pot of water to a boil. Add the cauliflower and cook for 3–4 minutes, just until slightly tender. Drain well and let cool completely.
- In a large bowl, whisk together mayonnaise, sour cream, apple cider vinegar, Dijon mustard, garlic powder, salt, and black pepper.
- Add the cooled cauliflower, bacon, cheddar cheese, red onion, celery, and green onions.
- Toss gently until everything is evenly coated.
- Cover and refrigerate for at least 1 hour to allow the flavors to blend.
- Sprinkle with fresh parsley and a little extra bacon before serving.
Notes
- For a vegetarian version, omit the bacon.
- Feel free to add other vegetables like bell peppers or cucumbers for extra crunch.
- This salad can be made a day in advance for better flavor.
