Description

Mango Oatmeal Crumble Bars are a delicious and healthy treat made with rolled oats, ripe mango, and a crumbly topping.

Ingredients

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup ripe mango, diced (about 2 medium mangoes)
  • 1/4 cup honey or maple syrup
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper for easy removal.
  2. In a large bowl, combine the rolled oats, flour, brown sugar, baking powder, and salt. Mix well.
  3. Pour the melted butter into the dry ingredients and stir until the mixture is crumbly and well combined. Reserve 1 cup of this mixture for the topping.
  4. In a separate bowl, mix the diced mango, honey (or maple syrup), lemon juice, and vanilla extract until the mango is well coated.
  5. Press the remaining oat mixture into the bottom of the prepared baking pan to form a crust.
  6. Spread the mango mixture evenly over the crust.
  7. Sprinkle the reserved oat mixture over the top of the mango layer.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
  9. Allow the bars to cool in the pan for at least 15 minutes before cutting into squares. For best results, chill in the refrigerator for an hour before serving.

Notes

  • For added flavor, consider mixing in a teaspoon of cinnamon or nutmeg into the oat mixture.
  • Substitute the mango with other fruits like peaches, blueberries, or apples for a different twist on the bars.
