Ingredients

  • ¾ cup (180 ml) warm whole milk
  • 2¼ teaspoons active dry yeast
  • ¼ cup (50 g) granulated sugar
  • 1 large egg
  • 4 tablespoons unsalted butter, melted
  • 3 cups (375 g) all-purpose flour
  • ½ teaspoon salt
  • 115 g mascarpone cheese, softened
  • 1 cup (240 g) maple caramel apple butter
  • ¼ cup (50 g) brown sugar
  • 1 teaspoon ground cinnamon
  • ½ cup (60 g) chopped walnuts, optional
  • 115 g mascarpone cheese, softened (for icing)
  • 1 cup (120 g) powdered sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk
  • 1 tablespoon maple syrup

Instructions

  1. Activate the yeast: Combine warm milk, yeast, and sugar. Let stand for 5–10 minutes, until foamy.
  2. Make the dough: Add the egg, melted butter, flour, salt, and mascarpone. Mix until a soft dough forms.
  3. Knead: Knead for about 8–10 minutes, until smooth and elastic. Place in a lightly greased bowl, cover, and let rise in a warm place for about 1–1½ hours, or until doubled.
  4. Roll out: Transfer the dough to a lightly floured surface and roll it into a large rectangle.
  5. Add the filling: Spread the maple caramel apple butter evenly over the dough. Sprinkle with brown sugar, cinnamon, and walnuts.
  6. Roll: Starting from the long side, tightly roll the dough into a log.
  7. Cut: Slice into 8–12 equal rolls and arrange them cut-side up in a greased 23 × 33 cm (9 × 13-inch) baking dish.
  8. Second rise: Cover and let the rolls rise for about 30–45 minutes, until noticeably puffy.
  9. Bake: Preheat the oven to 175°C (350°F). Bake for about 28–30 minutes, until golden and cooked through.
  10. Make the icing: Beat the mascarpone and powdered sugar until smooth. Add vanilla, maple syrup, and enough milk to create a creamy, drizzleable consistency.
  11. Finish: Spread the mascarpone icing over the rolls while they’re still warm, allowing it to melt into the swirls.

  • For a richer flavor, use fresh maple syrup in the icing.
