Maple Dijon Roasted Carrots are a delicious side dish that combines the sweetness of maple syrup with the tanginess of Dijon mustard, creating a flavorful glaze that caramelizes the carrots beautifully.
Ingredients
- 1 ½ lbs carrots, peeled and cut into sticks
- 2 tbsp olive oil
- 2 tbsp pure maple syrup
- 1 ½ tbsp Dijon mustard
- 1 tbsp melted butter
- 2 cloves garlic, minced
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp dried thyme
- 1 tbsp chopped fresh parsley, for garnish
Instructions
- Preheat the oven: Preheat oven to 425°F. Line a large baking sheet with parchment paper.
- Make the glaze: In a small bowl, whisk together olive oil, maple syrup, Dijon mustard, melted butter, garlic, salt, pepper, and thyme.
- Coat the carrots: Place carrots on the baking sheet and pour the maple-Dijon mixture over them. Toss until evenly coated.
- Roast: Spread the carrots in a single layer. Roast for 25–30 minutes, turning halfway through, until tender and caramelized around the edges.
- Finish: Transfer to a serving dish and drizzle with any remaining glaze from the pan. Garnish with fresh parsley.
Notes
- For extra caramelization, broil the carrots for 1–2 minutes at the end, watching closely so the maple glaze doesn’t burn.
