Ingredients

  • 2 pounds pumpkin, peeled, seeded, and cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1/4 cup pure maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped pecans (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
