Ingredients

  • 3 cups pumpkin, peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1/4 cup pure maple syrup
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 1 tablespoon red chili flakes (optional, for extra heat)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the pumpkin cubes, olive oil, maple syrup, chili powder, salt, and black pepper. Toss until the pumpkin is evenly coated.
  3. Spread the pumpkin mixture in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 25-30 minutes, or until the pumpkin is tender and caramelized, stirring halfway through for even cooking.
  5. Once roasted, remove the pumpkin from the oven and sprinkle the crumbled feta cheese over the top. Return to the oven for an additional 5 minutes to warm the feta.
  6. Remove from the oven, garnish with fresh parsley and red chili flakes if desired, and serve warm.
