Ingredients
- 3 cups pumpkin, peeled and cut into 1-inch cubes
- 2 tablespoons olive oil
- 1/4 cup pure maple syrup
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup feta cheese, crumbled
- 2 tablespoons fresh parsley, chopped (for garnish)
- 1 tablespoon red chili flakes (optional, for extra heat)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the pumpkin cubes, olive oil, maple syrup, chili powder, salt, and black pepper. Toss until the pumpkin is evenly coated.
- Spread the pumpkin mixture in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, or until the pumpkin is tender and caramelized, stirring halfway through for even cooking.
- Once roasted, remove the pumpkin from the oven and sprinkle the crumbled feta cheese over the top. Return to the oven for an additional 5 minutes to warm the feta.
- Remove from the oven, garnish with fresh parsley and red chili flakes if desired, and serve warm.
Notes
- For a sweeter touch, add a sprinkle of cinnamon or nutmeg to the pumpkin mixture before roasting.
- You can substitute the feta cheese with goat cheese for a creamier texture and a different flavor profile.
