A refreshing and tangy salad made with marinated cucumbers, onions, and tomatoes, perfect for summer gatherings.
Ingredients
- 2 large cucumbers, thinly sliced
- 3 medium tomatoes, cut into wedges or bite-sized pieces
- 1 medium red onion, thinly sliced
- 2 tablespoons chopped fresh parsley (optional)
- ½ cup apple cider vinegar
- ¼ cup olive oil
- 2 tablespoons granulated sugar (or honey)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- ½ teaspoon dried basil
- ¼ teaspoon crushed red pepper flakes (optional)
Instructions
- Wash and prepare the cucumbers, tomatoes, and onion. Place them in a large mixing bowl.
- In a separate bowl or measuring cup, whisk together the apple cider vinegar, olive oil, sugar, salt, pepper, garlic powder, oregano, basil, and red pepper flakes until well combined.
- Pour the marinade over the vegetables and gently toss until everything is evenly coated.
- Cover and refrigerate for at least 30 minutes, stirring once or twice while marinating.
- Just before serving, sprinkle with fresh parsley if desired.
Notes
- For a spicier kick, add more crushed red pepper flakes.
- This salad can be made a few hours in advance for better flavor.
