Description
Mediterranean Egg Muffins are a healthy and tasty delight, packed with nutritious ingredients and perfect for meal prep.
Ingredients
- 8 large eggs
- ¼ cup milk
- ½ cup crumbled feta cheese
- ½ cup chopped fresh spinach
- ½ cup diced red bell pepper
- ¼ cup finely chopped red onion
- ¼ cup sliced black or Kalamata olives
- 1 tablespoon chopped fresh parsley
- ½ teaspoon dried oregano
- ¼ teaspoon garlic powder
- ¼ teaspoon salt, or to taste
- ¼ teaspoon black pepper
- 1 tablespoon olive oil or cooking spray, for greasing the muffin pan
Instructions
- Preheat your oven to 350°F. Lightly grease a standard 12-cup muffin pan with olive oil or cooking spray.
- Chop the spinach, red bell pepper, red onion, and olives into small pieces. Pat the spinach dry if wet. Optionally, sauté the bell pepper and onion for 2–3 minutes.
- In a large bowl, whisk together the eggs and milk. Add oregano, garlic powder, salt, and black pepper, whisking until combined.
- Stir in the spinach, red bell pepper, red onion, olives, parsley, and most of the feta cheese. Reserve some feta for topping.
- Divide the egg mixture among the muffin cups, filling each about three-quarters full. Sprinkle reserved feta on top.
- Bake for 20–25 minutes, or until set and lightly golden. A thermometer should read 160°F in the center.
- Let the muffins rest for 5 minutes before loosening the edges and transferring to a serving plate. Garnish with parsley if desired.
Notes
- For a softer texture, sauté the bell pepper and onion before adding them to the mixture.
- Store cooled muffins in an airtight container for meal prep.
- These muffins can be enjoyed warm or cold.
