Description

Delicious Mediterranean Quesadillas filled with spinach, feta, mozzarella, and red onion, perfect for a quick meal.

Ingredients

  • 4 large flour tortillas
  • 2 cups fresh spinach, roughly chopped
  • 1 cup shredded mozzarella cheese
  • ½ cup crumbled feta cheese
  • ½ small red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp Italian seasoning
  • ¼ tsp red pepper flakes, optional
  • ¼ tsp black pepper
  • ¼ tsp salt
  • 2 tbsp chopped fresh parsley
  • 2 tbsp butter or olive oil, for cooking
  • Optional Additions: ½ cup chopped sun-dried tomatoes, ¼ cup sliced black olives, ½ cup chopped roasted red peppers, ½ cup cooked shredded chicken

Instructions

  1. Sauté the vegetables. Heat 1 tablespoon olive oil in a skillet over medium heat. Add the red onion and cook for 2–3 minutes until slightly softened.
  2. Add the garlic and spinach. Cook for 1–2 minutes, stirring, until the spinach wilts.
  3. Season with oregano, Italian seasoning, red pepper flakes, black pepper, and salt. Remove from the heat and let cool slightly.
  4. Assemble the quesadillas. Place a tortilla on a flat surface. Sprinkle half of the tortilla with mozzarella and feta. Add some of the spinach and onion mixture, then sprinkle with a little more mozzarella. Fold the tortilla in half.
  5. Cook. Heat a clean skillet over medium heat and lightly coat it with butter or olive oil. Place the quesadilla in the skillet and cook for 2–3 minutes per side, pressing gently with a spatula, until golden brown and the cheese is melted.
  6. Repeat with the remaining tortillas and filling.
  7. Slice and serve. Cut each quesadilla into wedges and serve hot with tzatziki and lemon wedges.

Notes

  • Tip: Squeeze out excess moisture from the cooked spinach before assembling. This keeps the quesadillas crisp instead of soggy.
