Ingredients

  • 1 lb salmon fillets, skin removed
  • 2 cups fresh spinach, finely chopped
  • ½ small red onion, finely diced
  • 3 cloves garlic, minced
  • ½ cup crumbled feta cheese
  • ½ cup breadcrumbs
  • 2 large eggs
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • 1 tsp dried oregano
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp olive oil, for cooking

Instructions

  1. Cook the salmon: Place the salmon in a skillet with a splash of water. Cover and cook over medium heat for about 6–8 minutes, or until just cooked through. Let cool slightly, then flake with a fork.
  2. Prepare the spinach: Heat 1 tsp olive oil in a skillet. Add the chopped spinach and cook for 1–2 minutes, just until wilted. Let cool and squeeze out excess moisture.
  3. Make the mixture: In a large bowl, combine the flaked salmon, spinach, red onion, garlic, feta, breadcrumbs, eggs, parsley, dill, oregano, lemon zest, lemon juice, paprika, salt, and pepper.
  4. Form the patties: Mix gently until combined. Shape into 8 patties, about ½-inch thick. If the mixture feels too soft, add 1–2 tablespoons more breadcrumbs.
  5. Chill: Place the patties in the refrigerator for 20–30 minutes. This helps them hold together while cooking.
  6. Pan-sear: Heat olive oil in a large skillet over medium heat. Cook the patties for 3–4 minutes per side, until golden brown, crisp on the outside, and heated through.
  7. Make the sauce: Whisk together Greek yogurt, lemon juice, garlic, dill, salt, and pepper.
  8. Serve: Serve the salmon-spinach patties warm with the lemon yogurt sauce, lemon wedges, a simple cucumber-tomato salad, or roasted vegetables.

  • For a spicier kick, add a pinch of cayenne pepper to the mixture.
