Description
Mediterranean Spinach Chips are a crispy and healthy snack made from fresh spinach, seasoned with olive oil, Parmesan cheese, and spices, baked to perfection.
Ingredients
- 4 cups fresh spinach leaves, washed and thoroughly dried
- 2 tablespoons olive oil
- ¼ cup finely grated Parmesan cheese
- ½ teaspoon garlic powder
- ½ teaspoon dried oregano
- ¼ teaspoon smoked paprika
- ¼ teaspoon sea salt, or to taste
- ⅛ teaspoon black pepper
- 1 tablespoon sesame seeds, optional
- 1 tablespoon crumbled feta cheese, optional
Instructions
- Preheat the oven. Heat your oven to 300°F. Line a large baking sheet with parchment paper.
- Prepare the spinach. Wash the spinach leaves and dry them thoroughly with a clean kitchen towel or salad spinner. Removing excess moisture is essential for crisp chips.
- Season the leaves. Place the spinach in a large bowl. Drizzle with olive oil and gently toss until lightly coated. Add the garlic powder, oregano, paprika, salt, and black pepper.
- Add the cheese. Sprinkle the Parmesan over the spinach and toss gently to distribute it evenly. Add sesame seeds if desired.
- Arrange on the baking sheet. Spread the leaves in a single layer, leaving space between them. Work in batches if necessary to prevent steaming.
- Bake until crisp. Bake for 15–20 minutes, checking frequently near the end. Remove smaller leaves that crisp up earlier. The chips should be dry and crisp but not browned or burnt.
- Cool and finish. Let the chips cool on the baking sheet for 3–5 minutes. Sprinkle with a little crumbled feta, if desired, and serve immediately.
Notes
- Dry the spinach completely before adding oil.
- Use only a light coating of oil; too much can make the leaves soggy.
- Keep the oven temperature low because spinach burns easily.
- For a dairy-free version, omit the Parmesan and feta and add a little nutritional yeast instead.
- Serve with hummus, tzatziki, or a lemon-yogurt dip.
- These chips are best eaten immediately. If storing, let them cool completely and keep them in an airtight container for up to 1 day; re-crisp briefly in a low oven if needed.
