Description

Mediterranean Spinach and Feta Crisps are a delicious and flaky pastry filled with a savory mixture of spinach, feta cheese, and mozzarella, perfect for appetizers or snacks.

Ingredients

  • 1 sheet puff pastry, thawed
  • 1 cup fresh spinach, finely chopped
  • 4 oz feta cheese, crumbled
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp cream cheese, softened
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 tsp dried oregano
  • 1/4 tsp black pepper
  • 1 large egg, beaten
  • 1 tsp sesame seeds (optional)

Instructions

  1. Preheat the oven. Preheat to 400°F. Line a baking sheet with parchment paper.
  2. Cook the spinach. Heat the olive oil in a skillet over medium heat. Add the chopped spinach and garlic, cooking for 2–3 minutes until the spinach wilts. Remove from the heat and allow to cool slightly.
  3. Prepare the filling. Squeeze out excess moisture from the cooked spinach. In a bowl, combine the spinach, feta, mozzarella, cream cheese, oregano, and black pepper. Mix until evenly combined.
  4. Prepare the pastry. Place the puff pastry on a lightly floured surface. Cut it into 12 equal squares.
  5. Fill the squares. Place a small spoonful of the spinach and feta mixture in the center of each square, leaving the edges clear.
  6. Shape the crisps. Fold each square into a triangle or leave it open-faced like a small tart. Press the edges firmly with a fork if making triangles.
  7. Apply the egg wash. Arrange the pastries on the prepared baking sheet. Brush the tops with beaten egg and sprinkle with sesame seeds, if desired.
  8. Bake until golden. Bake for 15–20 minutes, or until the pastry is puffed and crisp and the tops are golden brown.
  9. Cool and serve. Let the crisps rest for 5 minutes before serving. Enjoy warm as an appetizer, snack, or light lunch.

Notes

  • Squeeze the spinach thoroughly to prevent soggy pastry.
  • Keep the puff pastry cold while working for the flakiest texture.
  • Add chopped sun-dried tomatoes or sliced black olives for extra Mediterranean flavor.
  • Use a little lemon zest for a fresh, bright finish.
  • Refrigerate leftovers in an airtight container for up to 3 days. Reheat in a 350°F oven for 5–8 minutes to restore crispness.
