Ingredients

  • 6 cups (900 g) seedless watermelon, cut into bite-sized cubes
  • 1 medium cucumber (about 200 g), diced
  • 150 g feta cheese, crumbled or cubed
  • ½ cup (75 g) Kalamata olives, pitted and halved
  • ¼ small red onion (about 40 g), thinly sliced
  • ¼ cup (15 g) fresh mint leaves, chopped
  • 2 tablespoons (8 g) fresh parsley, chopped, optional
  • 3 tablespoons (45 mL) extra-virgin olive oil
  • 2 tablespoons (30 mL) fresh lemon juice
  • 1 teaspoon (5 mL) honey
  • ½ teaspoon (2.5 mL) dried oregano
  • ½ teaspoon (2.5 mL) sumac, optional
  • ¼ teaspoon (1.25 mL) black pepper
  • Pinch of salt, if needed

Instructions

  1. Prepare the watermelon: Cut the watermelon into bite-sized cubes. Place in a large bowl or colander and let excess juice drain for a few minutes. This helps prevent a watery salad.
  2. Prepare the vegetables: Dice the cucumber and thinly slice the red onion.
  3. Make the dressing: Whisk together the olive oil, lemon juice, honey, oregano, sumac, and black pepper.
  4. Combine: Add the watermelon, cucumber, red onion, Kalamata olives, and mint to a large serving bowl.
  5. Add the feta: Gently fold in the feta cheese, being careful not to crush the watermelon.
  6. Dress the salad: Drizzle the dressing over the salad and toss very gently until everything is lightly coated.
  7. Chill: Refrigerate for 15–20 minutes before serving for an especially refreshing salad.
  8. Finish: Sprinkle with additional fresh mint and a little sumac or freshly ground black pepper.
