Description

A delicious twist on the classic lasagna, featuring layers of seasoned beef, tortillas, and a blend of cheeses, topped with fresh ingredients.


Ingredients

  • lbs ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn, drained
  • 1 can (10 oz) diced tomatoes with green chiles, drained
  • 1012 small flour or corn tortillas
  • 2 cups shredded Mexican-blend cheese
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • ½ cup sliced black olives, optional
  • 2 green onions, sliced
  • Fresh cilantro, for topping
  • Diced tomatoes, for topping
  • Sliced jalapeños, for topping

Instructions

  1. Preheat the oven to 375°F. Lightly grease a 9×13-inch baking dish.
  2. Brown the ground beef and diced onion in a large skillet over medium-high heat for 6–8 minutes. Drain excess grease.
  3. Add garlic and cook for 30 seconds. Stir in taco seasoning, salsa, black beans, corn, and diced tomatoes with green chiles. Simmer for 5 minutes.
  4. Spread a thin layer of the beef mixture across the bottom of the baking dish. Place tortillas over the filling, overlapping slightly if necessary.
  5. Spread some sour cream over the tortillas, followed by another layer of the beef mixture and a sprinkle of both cheeses.
  6. Repeat the layers until all the ingredients are used, finishing with a generous layer of cheese on top.
  7. Sprinkle with black olives and green onions if using.
  8. Bake uncovered for 30–35 minutes, until hot and bubbling and the cheese is melted and golden.
  9. Let the lasagna rest for 10 minutes before slicing.
  10. Top with cilantro, tomatoes, jalapeños, and sour cream before serving.

Notes

  • For a richer flavor, use corn tortillas and lightly toast them in a dry skillet before layering.
