Description
Mini Green Bean Casserole Bites are a delightful appetizer perfect for parties, combining fresh green beans with creamy mushroom soup and topped with crispy fried onions.
Ingredients
- 1 pound fresh green beans, trimmed and cut into 1-inch pieces
- 1 cup cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1 cup French fried onions
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup crushed buttery crackers (like Ritz)
- 2 tablespoons unsalted butter, melted
Instructions
- Preheat the oven to 350°F.
- In a large pot of boiling salted water, blanch the green beans for 3-4 minutes until bright green and tender-crisp. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Once cooled, drain again and set aside.
- In a large mixing bowl, combine the cream of mushroom soup, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Stir in the blanched green beans until well coated.
- Spray a mini muffin tin with cooking spray. In a separate bowl, mix the crushed buttery crackers with the melted butter.
- Spoon about 1 tablespoon of the green bean mixture into each muffin cup. Top each with a sprinkle of the buttery cracker mixture and a few French fried onions.
- Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and bubbly. Let cool for a few minutes before removing from the muffin tin.
- Serve warm as a delightful appetizer or side dish.
Notes
- For a creamier texture, add an extra ½ cup of cream of mushroom soup.
- For a twist, substitute the cheddar cheese with mozzarella or pepper jack for a different flavor profile.
