Description

Delicious and moist apple oat muffins that can be prepared in just 30 minutes.


Ingredients

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups peeled and diced apples (about 2 medium apples)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, combine the rolled oats, flour, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. Mix well.
  3. In a separate bowl, whisk together the milk, vegetable oil, egg, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Gently fold in the diced apples and nuts (if using) until evenly distributed.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

  • For added sweetness, consider mixing in 1/2 cup of raisins or dried cranberries.
